Speedy Spice Rubbed Salmon
I’ll admit it, I find fish and seafood a bit intimidating in the kitchen. But this recipe couldn’t be simpler and still feels impressive (and healthy).
Whenever I’m at Costco and I see a big beautiful piece of salmon, I find myself gravitating towards it. We’re trying to implement more fish into our diet and this Wild Sockeye Salmon filet is making that an easy feat. This salmon can be served alongside any grain, some steamed veggies, or a salad - whatever you’re craving. Simple, satisfying and healthy!
Let’s go shopping.
1 salmon filet, approximately 1 lb (or .5 kg)
1/8 cup avocado oil
1 tsp ground cumin
1/2 tsp ground coriander
1 tsp paprika
1/8 tsp ground cinnamon
1/2 tsp brown sugar
1/2 tsp salt
1/4 tsp freshly ground black pepper
Pre-heat the oven to 425C.
In a small bowl, mix together all of the spices to make a rub for the salmon. Pour the avocado oil on the salmon and rub gently. Sprinkle the salmon with the price mixture until well coated and gently rub in, blending with the oil.
Here’s the how the salmon will look once the rub has been applied
Cook the salmon
Cook the salmon for approximately 20 minutes, or until the salmon is done. It’s really easy (and an unfortunate thing) to overcook it. You’ll know it’s done by pressing a fork lightly on the top of the filet, and if the flesh flakes, it's done!
Perfectly flakey!
Serve it hot
Serve immediately, cutting the salmon into desired serving sizes.
