Easy Cheesy Charred Broccoli

I am fully addicted

I know this seems like a simple appetizer but trust me these are so addicting you’ll be eating them (and the parm crisps) right off the pan.

I make this broccoli for my partner and I at least once a week. These are truly the most addicting vegetable I can think of and they’ve become a staple in my house. Whenever our family tries them, they always ask for the recipe and I’m almost embarrassed by how simple it it. If you don’t usually like broccoli, please give it one more kick at the can and try this out - I promise you’ll be hooked!

Let’s go shopping.

  • 1 large head of broccoli, cut into small florets (about 4 cups)

  • 1/4 cup avocado oil

  • 1 tsp red chilli flakes

  • 1 tsp salt

  • 1/2 tsp freshly ground black pepper

  • 2 cloves garlic, minced

  • 1/2 cup parmesan flakes

Pre-heat the oven to 425C.

In a medium bowl mix together the broccoli, oil, chilli flakes, salt, pepper and garlic. Toss until the broccoli is well coated.

Add the broccoli to a parchment lined sheet pan and cook for 20-25 minutes, tossing the broccoli about halfway through.

The key to this broccoli is to cook it a little longer than you usually might. You want the broccoli to get slightly charred on the edges to that they have a bit of a crisp. Remove the broccoli from the oven at this point.

Increase the oven to broil

Sprinkle the parmesan cheese atop the charred broccoli and add back to the (very) hot oven for about 1-2 minutes, watching closely. You want the parmesan to melt and begin to crisp up.

Serve it hot

Serve immediately, while hovering over the hot pan picking at it until there’s barely any left like I do, or on the side of any other main. I also add these to a salad as well for a nice texture and flavour.
