Pear, Pistachio and Fennel Salad
This salad is full of amazing textures, and is such a nice balance of salty and sweet thanks to the feta and the pears.
Let’s go shopping.
4 cups mixed greens
1 fennel bulb thinly sliced
1 bartlett pear, thinly sliced
1 green onion, thinly chopped
1 shallot, thinly sliced
1/4 cup feta
1/4 cup crushed pistachios
For serving
Dressing of our choice, I used a mixture of olive oil and red wine vinegar
