Green Goddess Dressing

This dressing is amazing - and vegan! You can use it atop salads, grain bowls or even as a veggie dip. It’s easy to make and a total crowd pleaser, turning a simple salad into a show-stopper.

Let’s go shopping.

  • 1 large ripe avocado

  • 3 green onions

  • 1 clove garlic

  • 1 1/2 cups, mix of fresh herbs (any blend of basil, parsley, dill or cilantro)

  • 1/4 lemon, juiced

  • 1/4 cup olive or avocado oil

  • 2 tbsp white wine (or champagne) vinegar

  • salt and pepper to taste

Make the dressing

Combine all ingredients a blender or in a medium container that can fit an immersion blender

Blend until fully combined. Depending on your desired consistency, add anywhere between 3 - 5 tbsp of water, continuing to blend.

Serve or store in an airtight container for up to 4 days.
