Citrus and Avocado Salad
Such a gorgeous salad to ring Spring in
As we welcome Spring, nothing makes me happier than a delicious, bright salad to gather around. This is vibrant, creamy and citrusy and a definite crowd pleaser (even for those who aren’t sure about fruit in salad - just try it!)
Let’s go shopping.
Salad (Serves six as an appetizer)
5 cups mixed greens
1/4 red onion, thinly sliced
2 oranges, peeled and thinly sliced (note: add another if you’re making the dressing)
1 large avocado, halved and thinly sliced
1/2 english cucumber, thinly sliced
salt and pepper
Dressing
4 tbsp fresh squeezed orange juice
zest of half an orange
1/3 cup olive or avocado oil
1 tsp dijon mustard
2 tbsp red wine vinegar
1 tsp honey
1/2 tsp salt
1/4 freshly cracked black pepper
Build the salad
Prepare all your ingredients and build the salad.
For the dressing, add all the ingredients into a container that can be easily shaken. Top the salad immediately prior to serving.
