Greek Salad

Our family loves a classic greek salad, but this one is leveled up thanks to an unsuspecting superstar - mint! This salad is a crowd pleaser and the recipe will serve about 6 as a side or an appetizer so adjust the amount of ingredients as required.

Let’s go shopping.

  • 1 small head romaine, washed and shredded finely

  • 1 green pepper, diced

  • 1/4 large red onion, diced

  • 4 mini cucumbers, diced

  • 1/2 cup pitted kalamata olives

  • 3 on the vine tomatoes, diced

  • 1/4 cup fresh parsley, finely chopped

  • 1/4 cup fresh mint, finely chopped

  • 1/4 lemon, juiced

  • 1/2 cup feta

  • salt and pepper to taste

For serving

  • I recommend using the greek salad dressing recipe you can find on this blog!

  • A few fresh mint leaves for garnish

Combine all ingredients

This one is pretty straight forward. Once all of your vegetables are cleaned and prepped, combine in a large bowl and top with the fresh lemon juice and a few fresh mint leaves for garnish.
