Spice & Herb Yogurt Dip
The ultimate “I don’t feel like making dinner” dinner
100% Carolina Gelen inspired. This Yogurt dip can be adapted with any mix of herbs and spices and is such a crowd pleaser.
Serve this up with crackers, crusty bread or my favourite, crudites.
Let’s go shopping.
1 1/2 cups full fat Greek yogurt
1/3 cup avocado or olive oil
3 garlic cloves, minced
1 green onion, finely chopped
1/4 cup fresh herbs, finely chopped (use any or any mix of parsley, dill, basil or chives)
1/2 tsp cayenne pepper
1/2 tsp red chilli flakes
1/4 tsp paprika
1 tsp freshly ground black pepper
3/4 tsp salt, more to taste
Notes: Swap the herbs as you see fit - if all you have is chives, that will work! Basil will also work nicely here. Choose your own adventure!
Prep the yogurt
Swirl the yogurt around in a low serving bowl.
Prep the spicy/herby oil
In a small sauce pan, heat the oil on medium high for 3-4 minutes. Meanwhile, in a small bowl or heatproof jar, add the garlic and spices. Once the oil is hot, pour it into the bowl or jar with the garlic/spices and let it infuse for 5 minutes (it will splatter and sizzle so be careful!).
Assemble the dip
Once the herby/spicy oil is infused, pour on top of the yogurt and serve! Voila!
