Fridge Clean-Out Chicken, Farro and Veggie Medley

I really didn’t even know what to call this recipe - but it got devoured for dinner & lunch!

You ever have one of those days where you have some defrosted chicken and a bunch of veggies on the verge? Et voila.

This is a fridge cleaner-outer. Whatever veggies you’ve got will work. Heck, whatever protein you’ve got will work, too, including ground beef or chicken breast, and the most simple of all - a rotisserie chicken. You don’t really even need any protein since the farro stands on its own. It’s quick, satisfying and mindless! Perfect mid-week meal.

Let’s go shopping.

Grains

  • 2 cups cooked farro (I cook mine in chicken broth)

  • 1 cup cooked chicken breast (I cooked a chicken breast with paprika, garlic powder, oregano and salt and pepper), diced

  • 1/2 green pepper, diced

  • 1 1/2 roma tomatoes, diced

  • 1/2 red onion, thinly sliced

  • 1/2 cup fresh parsley, chopped

  • 1/4 cup fresh dill, chopped

  • 1/2 cup feta

  • 1/2 english cucumber, diced

  • 1 avocado, sliced

Other

  • 1/3 cup olive or avocado oil

  • 1/2 lemon, squeezed

  • As much hot sauce as you can handle - we use this like it’s a dressing :) (I’m a Cholula girl)

Make the salad

Combine the cooked farro, chicken and veggies in a large bowl. Top with oil, lemon juice, salt and pepper and as much hot sauce as you like.
