Spicy Chicken Salad

It you have leftovers from rotisserie chicken, consider lunch sorted. This fun take on a traditional “chicken salad” can be made into a sandwich, wrapped in lettuce or enjoyed with some crackers. So simple and SO tasty.

Let’s go shopping.

  • 1 1/2 - 2 cups rotisserie chicken, diceed

  • 2 celery stalk (about 2/3 cup), diced

  • 1/4 white onion (about 1/4 cup), diced

  • 1/2 jalapeno, seeded and finely diced (optional)

  • 2 cloves garlic, minced

  • 1 small dill pickle, finely diced

  • 3 green onions, chopped

  • 1/4 cup fresh dill, finely chopped

  • 1/2 lemon, juiced

  • 1/2 cup mayo

  • 1 tsp dijon mustard

  • 2 tbsp sriracha

  • 1 clove garlic, minced

  • 1 tbsp dill pickle juice

  • salt and pepper

Combine ingredients

In a medium bowl combine all ingredients.

Mix it together until well incorporated.

Serve as a chicken salad sandwich or a lettuce wrap, or just eat right out of the bowl, no judgement! I like to top mine with a bit of extra sriracha for some kick right before serving.
